This late-winter bowl reminds me of the grain bowl salad boom circa 2016, in the best way. It’s meal prep-able, high in fiber & protein and relies on ingredients available at most grocery stores.
My boyfriend and I make an herbed farro salad at least once a month. We always have a little blue bag of Trader Joe’s 10-minute quick cooking farro in the pantry, and we play around with the herbs. We’ll eat it with meatballs flecked with feta and spinach, alongside broiled salmon + tzatziki or fried eggs. It’s a nice thing to have in the fridge, and uses up an entire bunch of herbs, or the last of any on the verge of wilting. I can’t wait to hear how you riff on it.
