I’m very into the rebranding of one-pot pasta into ‘single-skillet spaghetti’.
It sounds a lot more elegant, like everything from Meghan, Duchess of Sussex and her new Netflix show With Love, Meghan. As a former TV culinary producer, I watched it out of curiosity for the production - the themes, guests, food and prop styling, recipes, location, even the on-screen graphic treatments intrigued me. Everything was indeed elevated and so dang sweet. Meghan, and presumably her production team, have an incredible eye. I do, in fact, want to taste her raspberry preserves.
I am skipping any additional cultural commentary on the series and instead, share a recipe based on the Single-Skillet Spaghetti recipe created by Meghan’s culinary team, with a few additional flavor-building steps built in. You can make it in any large pot, Dutch oven or high-sided skillet you have that will fit the pasta. Meghan and I both agree that the Le Creuset Braiser is perfect for this.

As a former employee of Sur La Table and Williams Sonoma, you may be surprised to know that I don’t think you need a lot of stuff or a gorgeous kitchen to make great food at home.
A note in ingredients: This pasta made use of off-season greenhouse tomatoes I had leftover from a shoot. You could also use Mutti’s canned cherry tomatoes, available at more and more grocery stores these days, reducing some of the water. Make it a pantry/freezer meal and use frozen, defrosted spinach squeezed in a towel instead of the fresh greens called for in the recipe. It’s a little bit of summer in the final days of winter.
