As a private chef, I am often cooking in a) well-equipped, registered-at-Williams Sonoma-level kitchens or b) basically an Airbnb. I cook in a few client kitchens regularly, but oftentimes it’s one-off dinner parties that, despite the number of emails I send asking about the sheet tray situation, are always full of surprises.
What a chef keeps in their knife roll is sacred. Like a ladies’ purse, or a kid’s backpack, what we tote around says a lot about what we hold dear. Enter: my kit. An amalgamation of years as a private chef and food stylist, my kit is pared-down to the essentials. Think of this like my capsule wardrobe. I get 90% of my prep done with these items, supplementing with whatever pots and pans are available in my kitchen for the day.
Maybe you’re a culinary school grad building your kit or a home cook headed to a vacation rental. Perhaps you’re doing some much-needed spring kitchen cleaning and looking to streamline. I hope this list sparks a bit of inspiration, whatever kitchen you’re in.
